The evening begins with playful amuse bouche bites like conch fritters with sofrito and crispy fried shrimp heads, followed by Louisiana white shrimp escabeche over coconut risotto, smoked beef tongue with crispy plantains, cotija, and pepitas, and finishes with rum babas topped with Bavarian cream and tropical fruit.
Each course is paired with inventive cocktails featuring PorchJam’s Cheramie rums, creating a bold, Gulf-inspired dining experience where dinner, drinks, tax, and gratuity are all included for $85 per person.
